TECHNOLOGY IS THE QUALITY INGREDIENT

Gel Matic has been exporting Italian gelato technology and culture around the world since 1972. The company’s long history is the result of a great passion for gelato, backed up by continuous research into innovation and constant perfecting of the express freezing machines for the production of gelato and frozen yogurt. The seemingly simple construction is, in fact, the result of carefully selected materials, components and processes. Uncompromised quality lies at the core of Gel Matic’s philosophy. This is a crucial requirement for machines intended to come into contact with food. At the same time, quality is also a guarantee of the highest possible standards of reliability and performance and a long working life. An understanding of Gel Matic technology (developed over the past 40 years) also helps one see why customers have trusted the company so much to the point that it now sells its machines on the international markets.

Gel Matic is unique in that it specialises in the production of express blending and freezing units. In other words, all its resources are focused on a single goal: high levels of know-how and experience. Consequently, every machine has specific characteristics and its expected purpose, functioning and performance are made clear, right from the design stage. Total control of all stages in production means that Gel Matic has in-depth knowledge of all the problems – theoretical and practical – connected with soft serve and frozen yogurt production. This know-how is shared by all the workers, each of whom is carefully recruited and trained to guarantee the top professionalism and competence that customer have come to expect from Gel Matic. Not to mention the company’s logistical organisation that guarantees fast delivery times. Decisions that have become a style, well appreciated and recognised both within Italy and abroad.

Gel Matic machines are tested “in the field” throughout the world in a wide variety of climates and environmental conditions. This means that machine components are highly reliable and functional, guaranteeing optimised working efficiency and thus productivity. The careful ergonomic design of the structure and controls makes the machines particularly easy to use. Gel Matic’s in-depth knowledge of the express blending and freezing process means its machines easily satisfy even the most specific of requirements. Gear pumps that guarantee up to 80-90% overrun. Advanced refrigerating systems to save water and energy and cut noise levels. Innovative In.Co.Di.S. control systems to manage all the operating parameters locally or remotely. Special attention is also paid to customer service and machine maintenance thanks to innovative technical solutions.

In the delicate express freezing process, the gelato passes from a liquid state to a cream. Two systems are used to transfer the mixture from the stainless steel hoppers kept at a controlled temperature (2-4°C) to the freezing cylinders: gravity (GR) or via a gear pump (PM). Both these methods are used in the Gel Matic range, each with different characteristics and benefits. The gravity system is simple and reliable, and guarantees a good overrun (increase in volume). The pressurising gear pump system, on the other hand, increases output capacity and lets one increase the overrun even more, making this especially suitable for milk-based recipes. Depending on the different product type and the customer’s specific needs, the beater can be either a Teflon spiral or a whisk made from stainless steel with moving scraper blades.

Gel Matic refrigerating systems are designed and built to guarantee gelato at the right temperature, even in the hottest climates. And they guarantee this over time, thanks to the carefully selected components. The heat exchangers are deliberately over-sized and the parts are welded together to guarantee that there is never any leakage. Only the very best components are used: hermetic Bristol compressors, semi-hermetic Dorin compressors, Danfoss solenoid valves and Ebm Papst fans. Reliability guaranteed, no matter what the climate. Gel Matic also sees protecting the environment as a priority: the high efficiency water condensing units reduces the amount of water and gas (Freon R404 and R410) used to comply with current environmental standards. The Gel Matic SETech machines (Save Energy Technology) have high energy efficient motors and compressors to further reduce their environmental impact and allow for significant savings.

Gel Matic chooses to use only Lafert motors, 100% made in Italy and tropicalised as class F. Reliability and energy-savings go hand- in-hand thanks to the great efficiency of these motors: the beater motors meet the IE2 and IE3 standards of energy efficiency, just like the other power units used on Gel Matic machines. Mechanical transmission may be controlled by means of a worm screw or by a reduction gear made from cast-iron in an oil bath, designed in- house to meet the specific needs of express freezing units and so guarantee long-lasting machines. The robustness of the drive and its design details minimise the need for maintenance.
